Gather your ingredients and preheat your oven to 400 degrees Fahrenheit. Next, clean your potatoes and slice them into wedges. now, Move your potato wedges to a large mixing bowl and grab a small mixing bowl for the next step.

In the small mixing bowl, combine the lemon juice, lemon zest, olive oil, chicken broth, salt, pepper, oregano, and garlic powder: everything except the fresh parsley. Give all these ingredients a good mix with a fork until everything is incorporated. Then pour the liquid mixture over your potatoes and toss until they are coated.

Next, spread your potatoes in a single layer on a baking sheet and pour any remaining liquid over them. Then slide your baking sheet of potatoes into the oven and let them roast for 20 minutes. After 20 minutes, pull the baking sheet out and flip the potatoes over. Slide them back in the oven for another 25 minutes of roasting. Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit
  • Cut your potatoes into wedges and place them in a large mixing bowl. In a small mixing bowl, combine the olive oil, chicken broth, lemon zest, lemon juice, oregano, salt, garlic, and pepper. Pour the mixture over the potatoes and toss to coat. Spread the potatoes in a single layer on a baking sheet and pour any excess liquid into the baking sheet.
