Greek Potatoes
Lemon brings the party to these roasted potatoes that have a crispy exterior and a creamy interior.

- 3 lbs Golden Potatoes (Cut into Wedges)
- 1/3 Cup Olive Oil
- 1/2 Cup Chicken Broth
- 1 Lemon (Juiced and Zested)
- 2 Tsp Dried Oregano
- 1 Tsp Kosher Salt
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Black Pepper
- Fresh Parsley (For Garnish)
Preheat your oven to 400 degrees Fahrenheit
Cut your potatoes into wedges and place them in a large mixing bowl. In a small mixing bowl, combine the olive oil, chicken broth, lemon zest, lemon juice, oregano, salt, garlic, and pepper. Pour the mixture over the potatoes and toss to coat. Spread the potatoes in a single layer on a baking sheet and pour any excess liquid into the baking sheet.
Bake for 20 minutes, then flip the potatoes. Then bake an additional 25 minutes. Sprinkle with parsley and serve
