Equipment

  • Electric Hand Mixer Optional but encouraged
  • Electric Kettle Optional

Ingredients
  

  • 6 Large Eggs Whites and Yolks Seperated
  • 1 lb Confectioners Sugar
  • 2 Tsp Vanilla Extract
  • 1/4 Tsp Cinnamon
  • 1 Dash Nutmeg (For Garnish)
  • 1/4 Tsp Baking Soda
  • 1 Cup Brandy
  • 1 Cup Dark Rum

Instructions
 

  • Separate your eggs, placing the whites and yolks in separate mixing bowls.
  • Using an electric mixer or whisk, beat the egg whites until they form stiff peaks (8-9 minutes depending on temperature and whisk speed). Once stiff, slowly add the confectioners sugar to the egg whites while still mixing. Set aside.
  • Slowly whisk the egg yolks until they become thin and watery. Add one ounce each of Brandy and Dark Rum to the yolks. Also add the Vanilla, Cinnamon, Baking Soda, and a dash of Nutmeg to the yolks and mix thoroughly.
  • Fold the egg yolk mixture into the egg white mixture until fully combined. This batter can be used immediately or stored in the refrigerator for up to 24 hours.

To make the drink

  • Boil several quarts of water. Rinse a coffee mug with boiling water to heat it.
  • Add a heaping Tablespoon (or two) of batter to the rinsed mug, then add an ounce of Dark Rum and an ounce of Brandy. Slowly add boiling water to the mug until the batter floats to the top but does not overflow the mug.
  • Garnish with Nutmeg and enjoy it warm.
